Our Raw Wildflower Honey is medium-dark and versatile, with notes of sage, wildflower and mint. Every varietal of Jacobsen Co. Honey is single-origin, sustainably harvested, and never heated, treated, blended or ultra-filtered.
The minty note really comes through on the finish, which I didn’t expect from a honey. It’s thick and dark enough to stand up in toast without dripping everywhere, and I’ve been drizzling it over plain yogurt every morning since the jar arrived.
The dark color is exactly what I hoped for, and the sage and mint notes come through without being overpowering. I wish the jar had a wider mouth for easier scooping, but the honey itself has a nice thick texture that works great stirred into tea.
The glass jar arrived with the honey crystallized a bit, but a warm water bath fixed that fast. The flavor is genuinely interesting—I taste the wildflower and a cool minty note at the end, and it's not overly sweet like the supermarket stuff. Just wish the jar were a little bigger for the price.
