Onze rauwe wilde honing is middel-donker en veelzijdig, met tonen van salie, wilde bloemen en munt. Elke variëteit van Jacobsen Co. Honey is afkomstig van één enkele oorsprong, duurzaam geoogst en nooit verhit, behandeld, gemengd of ultrafijn gefilterd.
The minty note really comes through on the finish, which I didn’t expect from a honey. It’s thick and dark enough to stand up in toast without dripping everywhere, and I’ve been drizzling it over plain yogurt every morning since the jar arrived.
The dark color is exactly what I hoped for, and the sage and mint notes come through without being overpowering. I wish the jar had a wider mouth for easier scooping, but the honey itself has a nice thick texture that works great stirred into tea.
The glass jar arrived with the honey crystallized a bit, but a warm water bath fixed that fast. The flavor is genuinely interesting—I taste the wildflower and a cool minty note at the end, and it's not overly sweet like the supermarket stuff. Just wish the jar were a little bigger for the price.
